Potato Soup with the Works - Rachael Ray - Big Orange Book

So my dad and I cooked this for the family last Sunday for my brother's birthday get together at our house. Actually dad did most of the cooking, I had a migraine and upset stomach and sliced into my thumb while chopping the leeks. I really need an immersion blender, we ladled this into the blender and it came out super thick so we added broth to thin it out as we blended, but it still resembled baby food. Tasted great and really quick and easy. This was another one in the Le Creuset dutch oven. We added more potatoes so we would have enough for eight people but didn't add more bacon and we should have, the flavor was lost. Instead of serving the cheese on top we bought two different soups and did grilled cheese sandwiches on sourdough bread. A really good choice and another thought of having enough food for eight. My thumb is doing better, for those who may have been concerned. It really did hurt, and bled a lot, but I did not cry. I really had no business with a knife that day since I did feel so crummy but I didn't want my dad doing all the work. I think Shane liked this soup, but would prefer a different consistency, maybe a bit chunkier. I'll work on taking pics as I cook and finished servings too.

We had a great family day and I love having everyone over to our house. I went to World Market and spent way too much money on getting goodies for my brother (birthday boy), my boyfriend (Valentine's goodies) and my niece (more Valentine goodies). The poor dogs, my niece was chasing them around wanting to pet them or wanting one of us to hold them so she could pet them. She is a really good kid, but I don't think she gets dogs since she doesn't have any, but that's ok. My pups know to go upstairs to get away if they get too annoyed.
